Tamal coladao originario del sur de mexico se caracteriza por tener una doble coccion. en esta ocasion lo hicimos con una espuma de hongos silvestres que se dan por temporada y terminamos con trufa de veran.

Tamale coladao, originally from southern Mexico, is characterized by having a double cooking. On this occasion we did it with a foam of wild mushrooms that occur seasonally and we finished with summer truffle.
